I have been reading a lot of Runner's World lately. My sister in law gave me a subscription for my birthday (I feel like I mention Ashley in every blog. Ashley is awesome. Yay Ashley!). Anyway, it has been a great source of knowledge and I particularly enjoyed this last issue as the featured topic was food and, well... I love food.
Specifically, there was an entire "ode to pancakes" that has had me craving pancakes ALL. WEEK. LONG. Unfortunately for me, pancakes have milk, eggs AND butter in them, so I had to come up with my own recipe. Which I did, and today after my run, I enjoyed a great big stack of pancakes. So freaking good. I will share the recipe at the end of this post.
There was another article that captured my attention this week, and that was a mom who wrote about how she pushed herself on runs by "racing" other runners. Usually men because it seems like they love to take the bait. What 6'0" man likes being passed by a tiny 5'3" woman?
Today, about 1/3 of the way into my run, I came across a guy at a stoplight and unintentionally challenged him to a race. I was trying to up my speed this week, so I set a goal to sprint 30 seconds out of every 3-4 minutes that I ran. It just so happened that when I came upon this man I was due for a sprint. As soon as the light changed I bolted off and it was ON. We probably ran at the same pace for 2 miles... he would bust into a sprint and I'd catch up, he'd start walking and I'd overtake him... it was awesome. I'm sure he thought I was totally crazy, but I also caught him looking over his shoulder a few times to see how far I was behind him. It was kind of a fun little challenge. And I am happy to say that I definitely held my own against a six foot tall man. Not that anyone's keeping track. ;)
And now for some pancakes.
CLEAN FRUIT PANCAKES
makes 11 pancakes
1 1/2 cups whole wheat flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 1/4 cups unsweetened coconut milk
2 Tablespoons flaxseed meal
1/3 cup unsweetened applesauce
1 medium banana, mashed
nutmeg and cinnamon to taste
1. Combine the flaxseed meal with 6 tablespoons of warm water. Stir and allow to sit about ten minutes.
2. In a large bowl, stir together flour, baking powder, and salt.
3. In a separate bowl, combine milk, applesauce, banana, and flaxseed mixture.
4. Gently fold wet ingredients into dry ingredients and season using cinnamon and nutmeg (or whatever spices you prefer).
5. Cook on a skillet over medium heat, just like normal pancakes. These will be denser and more moist than their white-sugar-and-flour counterparts, but they are still good!

Compared to regular pancakes: Cal: 150 Carbs: 21g Fat: 6g Protein: 4g Sodium: 504mg Fiber: 0g
